Blueberry French Toast in a Jar

There is nothing better than warm comfort food to start your day. This healthy featured recipe is a twist on a breakfast classic will soon be a household favorite. Whole grains, fiber, protein and antioxidants mean that this jar offers more than just delicious flavors.

Ingredients

  • 2 ea Slices of Whole Grain Bread cubed
  • 2 ea Egg White
  • 1 tablespoon Almond Milk Unsweetened Vanilla
  • 1 teaspoon Date
  • 1⁄3 cup Frozen Organic Blueberries
  • 1⁄4 teaspoon Pure Vanilla Extract
  • 1 dash Cinnamo
  • Optional 1 tablespoon Plain Vegan Yogurt For Garnish
  • Optional 1 tablespoon Maple Syrup For Garnish
  • Optional 1 teaspoon Slivered Almonds For Garnish

    Directions

    This recipe makes one 16 oz wide mouth jar (pint).
    Preheat oven to 350 degrees
    Lightly coat the inside of the jar with a mist of organic olive oil.
    Add the egg whites, almond milk, date sugar, vanilla and cinnamon to a medium sized mixing bowl and whisk until well blended.
    Add the blueberries and bread to the egg mixture and gently stir until the bread has absorbed most of the liquid.
    Pour the egg, berry, bread mixture into the jar.
    Bake at 350 degrees for 20-25 minutes or until golden brown and cooked through.
    Eat as is (it is delicious this way) or top with plain yogurt, slivered almonds and/or maple syrup.
    Enjoy immediately or cover and store in the fridge for 3-4 days.


South Western Omelet in a Jar

This jar is packed full of savory southwestern flavors, protein, dark leafy greens and fiber! Think breakfast burrito in a jar. Nutritional yeast gives this omelet on-the-go a cheesy flavor without the unwanted extra fat and calories

Ingredients

  • 2 – 3 tablespoons Ranchero Beans or Fat Free Vegan Refried Beans
  • 2 each Egg Whites
  • 1⁄3 cup Frozen Organic Spinach Thawed and well squeezed
  • 2 ea Chopped Fresh Mushroom
  • 1 tablespoon Frozen Organic Corn
  • 1 tablespoon Nutritional Yeast
  • 1⁄2 teaspoon Taco Seasoning
  • 1⁄4 Cup Salsa
  • Optional Diced Avocado Garnish
  • Optional Fresh Cilantro Garnish

    Directions

    Preheat oven to 350 degrees
    Prepare a 16 oz (pint size) wide mouth Mason Jar by spraying the inside with a very light coating of organic olive oil.
    Spoon the beans into the bottom of the jar
    In a small bowl, whisk together the egg whites, nutritional yeast and taco seasoning.
    Stir in the vegetables and pour mixture into the jar
    Bake at 350 degrees for 30-35 minutes or until the egg mixture has firmly set.
    Top with salsa, avocado and cilantro.
    Eat immediately or cover with lid and store in the fridge for up to 3 days.
